The Paramount Winner

If these are just the tips, we'd sure love to see the whole iceberg! This long-lived Beacon Hill café has taken a down-home cookout classic and injected it with big-city cheekiness. It's above all a matter of size. More like mini-sirloins than the typical two-bite odds-and-ends, the Paramount's tips are plenty thick and juicy, with a clean, understated barbecue tang. But it's also about the big picture, as they're topped with glistening browned onions and strewn around a mound of mashed spuds - red bliss, which have a homey, fluffy texture - to create a plate worthy of any roadside diner or old-school chophouse.
